- 1 cup carrots, chopped
- 1 cup green beans, chopped
- 1 cup peas
- 1 tablespoon olive oil (or fish oil)
- Optional: Fresh parsley or basil for flavor
Instructions
- Gather ingredients: Begin by rinsing your chosen grains until the water runs clear.
- Cook the grains: Combine the brown rice (or substitutes) with twice the amount of water in a pot. Bring it to a boil, then reduce the heat to low, cover, and let it simmer until the grains are tender.
- Prepare the protein: While the grains cook, heat a skillet over medium heat. Add a drizzle of olive oil, then sauté your protein until it’s thoroughly cooked.
- Add vegetables: Stir in chopped carrots and green beans, cooking until they’re just tender.
- Combine everything: In a large bowl, mix the protein, grains, and veggies. Drizzle olive oil, mix thoroughly, and let it cool down before serving.
- Scoop into airtight containers to keep for up to five days in the fridge.
