Ingredients
- 2 cups shredded cooked chicken (can use rotisserie chicken for convenience)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 packet ranch seasoning mix
- 2 cups shredded cheese (cheddar or a blend)
- 1 bag (9.75 oz) of Doritos, crushed (Nacho Cheese or Cool Ranch)
- Optional: 1 cup diced vegetables (like bell peppers, onions, or mushrooms)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, ranch seasoning, and half of the cheese.
- Stir in any optional veggies, making sure every ingredient is well mixed.
- Spread half of the crushed Doritos in the bottom of the greased baking dish. Pour the chicken mixture over the chips and spread it evenly.
- Sprinkle the remaining Doritos and cheese on top.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for another 15-20 minutes, or until the top is golden and bubbly.
- Let it cool slightly before serving. Garnish with fresh herbs if desired.
Notes
For extra kick, consider adding jalapeños or cayenne pepper. Allow the casserole to sit for about 5 minutes before serving for easier slicing.
