Ingredients
- 1 cup natural peanut butter (xylitol-free)
- 1/4 cup coconut oil
- 3 cups puffed rice cereal
- 1/2 cup mashed banana or pumpkin puree (optional)
Instructions
- Melt the peanut butter and coconut oil in a medium saucepan over low heat until smooth.
- Remove from heat and add the puffed rice cereal; gently fold until well-coated.
- If desired, fold in the mashed banana or pumpkin puree.
- Line an 8×8-inch baking dish with parchment paper and pour in the mixture, pressing down evenly.
- Let cool at room temperature for at least 30 minutes before cutting into squares.
Notes
Store leftovers in an airtight container in the fridge for up to a week or freeze for up to three months.
