Ingredients
- 1 ½ cups oat flour (or whole wheat flour)
- ½ cup natural, unsweetened peanut butter
- ½ cup applesauce or mashed bananas (or unsweetened pumpkin puree)
- 1 tsp baking powder
- 1 large egg (or flaxseed meal mixed with water for vegan option)
- 1 cup shredded carrots (or zucchini)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a large bowl, combine the oat flour, baking powder, and shredded carrots. Stir until evenly mixed.
- In another bowl, whisk together the peanut butter, applesauce or mashed bananas, and egg until smooth.
- Gradually add the wet ingredients to the dry, mixing until combined. The mixture may be thick; that’s perfectly fine!
- Scoop the batter evenly into the cupcake liners, filling them about halfway.
- Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely before frosting with unsweetened Greek yogurt mixed with peanut butter or plain cream cheese.
Notes
Serve cupcakes with dog-friendly frozen yogurt or a small dog-friendly birthday cake for special occasions.
