Ingredients

  • 1 cup pumpkin puree
  • 1 cup peanut butter
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 cup softened butter
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the pumpkin puree and peanut butter in a large mixing bowl until smooth.
  3. Add the brown sugar, egg, and softened butter, mixing until creamy.
  4. Whisk together the flour, spices, and salt in another bowl, then gradually add to the wet mixture, stirring until just combined.
  5. Drop rounded tablespoons of dough onto the baking sheet, flattening them slightly with the back of a spoon.
  6. Bake for about 12-15 minutes or until edges are lightly golden. Allow to cool before transferring to a wire rack.
  7. Serve immediately or store in an airtight container.
