Ingredients
- 1 lb boneless chicken breasts (or thighs)
- 1 lb gnocchi (store-bought or homemade)
- 8 oz cream cheese
- 1 cup chicken broth
- 2 cloves garlic (minced)
- 1 sweet or yellow onion (finely chopped)
- 2 tablespoons fresh herbs (dill or parsley)
- 2 tablespoons butter (for sautéing)
- Salt and pepper (to taste)
Instructions
- In a large skillet, melt the butter over medium heat. Add the minced garlic and chopped onion; sauté until fragrant and the onion is translucent.
- Season the chicken with salt and pepper, then increase the heat to medium-high and add the chicken to the skillet. Cook until golden and cooked through, about 6-7 minutes on each side. Remove and set aside.
- In the same skillet, reduce the heat to medium and add the cream cheese. Stir in the chicken broth, mixing until creamy and smooth.
- Gently add the gnocchi to the sauce followed by the sautéed chicken. Cook for an additional 3-4 minutes until the gnocchi are tender and heated through.
- Stir in chopped herbs and adjust seasoning with salt and pepper. Serve warm, garnished with extra herbs.
Notes
For faster preparation, use pre-cooked chicken. Serve with a simple green salad or crusty bread.
