Ingredients

  • 1 lb boneless chicken breasts (or thighs)
  • 1 lb gnocchi (store-bought or homemade)
  • 8 oz cream cheese
  • 1 cup chicken broth
  • 2 cloves garlic (minced)
  • 1 sweet or yellow onion (finely chopped)
  • 2 tablespoons fresh herbs (dill or parsley)
  • 2 tablespoons butter (for sautéing)
  • Salt and pepper (to taste)

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the minced garlic and chopped onion; sauté until fragrant and the onion is translucent.
  2. Season the chicken with salt and pepper, then increase the heat to medium-high and add the chicken to the skillet. Cook until golden and cooked through, about 6-7 minutes on each side. Remove and set aside.
  3. In the same skillet, reduce the heat to medium and add the cream cheese. Stir in the chicken broth, mixing until creamy and smooth.
  4. Gently add the gnocchi to the sauce followed by the sautéed chicken. Cook for an additional 3-4 minutes until the gnocchi are tender and heated through.
  5. Stir in chopped herbs and adjust seasoning with salt and pepper. Serve warm, garnished with extra herbs.

Notes

For faster preparation, use pre-cooked chicken. Serve with a simple green salad or crusty bread.
