A festive mix of sweet and tart cranberries with fruit and a creamy topping, perfect for holiday gatherings.

Ingredients

  • 12 oz fresh cranberries
  • 1 cup sugar
  • 1 can (8 oz) crushed pineapple, drained
  • 1 medium apple, finely chopped
  • 1 cup seedless grapes, halved
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 cup heavy whipping cream (or whipped topping)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Rinse cranberries and pulse in a food processor until finely chopped (not puréed).
  2. Stir chopped cranberries with sugar in a large bowl, cover and refrigerate at least 2 hours or overnight.
  3. Stir in pineapple, apple, grapes, and nuts.
  4. Beat whipping cream with powdered sugar and vanilla until soft peaks form.
  5. Spread creamy topping over salad, or serve on the side. Chill until ready to serve.

Notes

Make the cranberry mixture the night before for enhanced flavor. Keep the nuts separate if prepping ahead, to avoid softening.
