A delightful blend of tart cranberries and zesty oranges, this sweet bread is perfect for breakfast or as an afternoon snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup melted butter (or vegetable oil)
  • 2 large eggs
  • 1/2 cup fresh orange juice
  • 1 tablespoon grated orange zest
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. If using fresh cranberries, rinse and drain them. For frozen cranberries, toss them into the batter directly without thawing. Dried cranberries should be plumped in warm water for a few minutes, then drained and dried.
  3. In a large bowl, combine flour, baking powder, baking soda, and salt.
  4. In another bowl, whisk together granulated sugar, brown sugar, melted butter (or vegetable oil), eggs, orange juice, and orange zest.
  5. Pour the wet ingredients into the dry and gently stir until combined, being careful not to overmix.
  6. Fold in the cranberries until evenly distributed throughout the batter.
  7. Transfer the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a golden crust, brush the top with melted butter before baking. If the bread browns too quickly, tent it with foil halfway through.
