Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup melted butter (or vegetable oil)
- 2 large eggs
- 1/2 cup fresh orange juice
- 1 tablespoon grated orange zest
- 1 cup fresh or frozen cranberries
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
- If using fresh cranberries, rinse and drain them. For frozen cranberries, toss them into the batter directly without thawing. Dried cranberries should be plumped in warm water for a few minutes, then drained and dried.
- In a large bowl, combine flour, baking powder, baking soda, and salt.
- In another bowl, whisk together granulated sugar, brown sugar, melted butter (or vegetable oil), eggs, orange juice, and orange zest.
- Pour the wet ingredients into the dry and gently stir until combined, being careful not to overmix.
- Fold in the cranberries until evenly distributed throughout the batter.
- Transfer the batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a golden crust, brush the top with melted butter before baking. If the bread browns too quickly, tent it with foil halfway through.
