A festive and comforting quick bread featuring tart cranberries and bright orange flavor, perfect for holiday mornings.

  • Total Time: 70 minutes
  • Yield: 12 slices

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon (optional)
  • ½ cup unsalted butter, melted
  • ¾ cup fresh orange juice
  • 2 tsp orange zest
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups fresh or frozen cranberries (halved if large)
  • ½ cup chopped walnuts or pecans (optional)
  • 1 cup powdered sugar (for glaze, optional)
  • 2–3 tbsp orange juice (for glaze, optional)

Instructions

  1. Preheat Oven: Preheat to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Combine Wet Ingredients: In another bowl, whisk melted butter, orange juice, zest, eggs, and vanilla.
  4. Make the Batter: Stir wet mixture into dry until just combined. Gently fold in cranberries and nuts.
  5. Bake: Pour batter into prepared loaf pan. Bake 50–55 minutes, until toothpick inserted comes out clean.
  6. Cool & Glaze (Optional): Cool 10 minutes, then transfer to a wire rack. Drizzle with orange glaze once fully cooled.

Notes

Toss cranberries in 1 tbsp flour before folding in to prevent sinking. Use fresh-squeezed orange juice for the brightest flavor. This bread tastes even better the next day as the flavors meld.
