Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp cinnamon (optional)
- ½ cup unsalted butter, melted
- ¾ cup fresh orange juice
- 2 tsp orange zest
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups fresh or frozen cranberries (halved if large)
- ½ cup chopped walnuts or pecans (optional)
- 1 cup powdered sugar (for glaze, optional)
- 2–3 tbsp orange juice (for glaze, optional)
Instructions
- Preheat Oven: Preheat to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Combine Wet Ingredients: In another bowl, whisk melted butter, orange juice, zest, eggs, and vanilla.
- Make the Batter: Stir wet mixture into dry until just combined. Gently fold in cranberries and nuts.
- Bake: Pour batter into prepared loaf pan. Bake 50–55 minutes, until toothpick inserted comes out clean.
- Cool & Glaze (Optional): Cool 10 minutes, then transfer to a wire rack. Drizzle with orange glaze once fully cooled.
Notes
Toss cranberries in 1 tbsp flour before folding in to prevent sinking. Use fresh-squeezed orange juice for the brightest flavor. This bread tastes even better the next day as the flavors meld.
