- 1 cup fresh carrots, grated
- 2 cups whole wheat flour (or oat flour for gluten-free)
- 1 cup unsweetened coconut flakes
- 1/4 cup coconut oil, melted
- 1 egg
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the carrots: Peel and finely grate the carrots.
- Combine the dry ingredients in a large bowl: whole wheat flour and coconut flakes.
- Mix the wet ingredients in a separate bowl: whisk together coconut oil, egg, and grated carrots.
- Combine the wet mixture with the dry ingredients until a dough forms.
- Roll out the dough on a floured surface to 1/4 inch thick.
- Bake on a parchment-lined baking sheet for 25-30 minutes until golden brown.
- Cool completely before serving and store in an airtight container.
