Ingredients
- 2 cups whole wheat flour
- 1/2 cup unsweetened coconut flakes
- 1/2 cup grated carrots
- 1 large egg
- 1/4 cup coconut oil, melted
- 1/4 cup water or low-sodium chicken broth
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the whole wheat flour and unsweetened coconut flakes in a large bowl.
- Grate the carrots finely and add them to the flour mixture.
- Whisk together the egg and melted coconut oil in a separate bowl, then pour into the dry ingredients along with the water or broth.
- Mix until a dough forms, adding more water if too dry.
- Roll out the dough to about 1/4 inch thick on a lightly floured surface.
- Cut out the biscuits using cookie cutters or a knife.
- Place the biscuits on a lined baking tray and bake for 25-30 minutes, until golden brown.
- Allow to cool completely before serving.
Notes
These biscuits can be frozen for up to three months. Let them thaw before serving.
