- 1 cup unsalted butter, softened

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter and brown sugar until light and fluffy.
- Add in the egg and mix until well incorporated.
- In another bowl, combine flour, baking soda, and cinnamon.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Roll portions of dough into balls about 1 inch in diameter.
- Mix granulated sugar and cinnamon in a shallow bowl for coating.
- Roll each ball in the cinnamon-sugar mixture until fully coated.
- Place on the prepared baking sheet, spaced about 2 inches apart.
- Bake for 10-12 minutes or until the edges are slightly golden.
- Let the cookies cool for a few minutes before transferring to a wire rack.
Notes
For added flavor, drizzle with warm chocolate sauce or serve with vanilla ice cream. Ensure butter is at room temperature for easier mixing.
