Ingredients
- 1 ½ cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- ½ cup buttermilk
- ½ cup unsalted butter, softened
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line your muffin tin with cupcake liners.
- In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, cream the unsalted butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, and then add the vanilla extract.
- Gradually alternate adding the dry ingredients and buttermilk, mixing until just combined.
- Fill the cupcake liners about two-thirds full with the batter and bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow cupcakes to cool in the pan for a few minutes before transferring to a wire rack.
- Prepare the ganache by heating heavy cream and pouring it over chopped chocolate; stir until smooth and let it cool slightly before drizzling over cupcakes.
- Decorate with sprinkles, chocolate shavings, or fresh berries.
Notes
For a lighter treat, consider using applesauce as a substitute for some butter or reducing sugar.
