Ingredients

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup dark chocolate chips
  • 1 teaspoon peppermint extract
  • 1/4 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 inch baking pan with parchment paper.
  3. Melt the butter in a medium saucepan over low heat, then stir in granulated and brown sugars.
  4. Once cool, whisk in the eggs and vanilla until smooth.
  5. In a separate bowl, sift together flour, cocoa powder, and salt then fold into wet ingredients until just combined.
  6. Stir in chocolate chips and peppermint extract.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 25-30 minutes until a toothpick comes out with moist crumbs.
  9. Let cool for 20 minutes, then lift out and cool completely on a wire rack before slicing into squares.
