Ingredients
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 3/4 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup dark chocolate chips
- 1 teaspoon peppermint extract
- 1/4 cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8 inch baking pan with parchment paper.
- Melt the butter in a medium saucepan over low heat, then stir in granulated and brown sugars.
- Once cool, whisk in the eggs and vanilla until smooth.
- In a separate bowl, sift together flour, cocoa powder, and salt then fold into wet ingredients until just combined.
- Stir in chocolate chips and peppermint extract.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes until a toothpick comes out with moist crumbs.
- Let cool for 20 minutes, then lift out and cool completely on a wire rack before slicing into squares.
Notes
For added richness, substitute dark chocolate chips and experiment with nutty extracts if desired.
