Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • Pinch of salt
  • 2 large eggs
  • 1 cup buttermilk (or yogurt)
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 tablespoons espresso powder
  • 1 cup boiling water

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare a 9-inch round cake pan by greasing it or lining it with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until fully combined.
  3. In a separate dish, beat together the eggs, buttermilk, vegetable oil, and vanilla extract.
  4. Gradually add the wet ingredients into the dry ingredients, stirring gently until just blended.
  5. Dissolve the espresso powder in the boiling water and carefully add it to the cake mixture.
  6. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  7. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

For extra flavor, brush the cooled cake with coffee simple syrup before frosting.
