Ingredients
- 1 pound boneless, skinless chicken thighs or breast
- 2 tablespoons olive oil
- Juice of 2 limes
- Zest of 1 lime
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup fresh pineapple, diced
- ½ red bell pepper, finely chopped
- ¼ red onion, diced
- 1 jalapeño, minced
- Fresh cilantro, chopped
- Lime juice (from half a lime)
- Corn or flour tortillas
- Avocado slices (optional)
- Crumbled feta or cotija cheese (optional)
Instructions
- Marinate the Chicken: Mix olive oil, lime juice, lime zest, chili powder, cumin, salt, and pepper in a bowl. Add chicken and marinate for at least 30 minutes.
- Prepare the Grilled Pineapple Salsa: Grill pineapple until charred, about 3-4 minutes per side. Combine with bell pepper, onion, jalapeño, cilantro, lime juice, and salt in a bowl.
- Cook the Chicken: Grill marinated chicken for 5-7 minutes per side until cooked through. Let it rest before slicing.
- Assemble the Tacos: Warm tortillas, layer sliced chicken and salsa, and add avocado and cheese if desired.
- Serve and Enjoy: Serve immediately with lime wedges.
Notes
For deeper flavor, marinate the chicken overnight. Use fresh ingredients for the best taste.
