Instructions
- Prepare your ingredients: Gather everything and ensure the chicken is diced into small, even pieces. Rinse the rice under cold water to remove excess starch, and chop the spinach coarsely.
- Sauté the chicken: Heat olive oil in a large skillet over medium heat. Once hot, add the diced chicken, seasoning lightly with garlic powder. Cook for about 5-8 minutes, until the chicken is fully cooked through and golden brown. Stir occasionally.
- Add in the vegetables: Toss the chopped spinach and diced carrots into the skillet. Cook for another 2-3 minutes until the spinach wilts and the carrots soften slightly.
- Combine with rice: Stir in the rice, mixing everything thoroughly. Pour in the broth, ensuring it covers the food. Bring the mixture to a gentle boil, then reduce the heat and cover.
- Cook slowly: Let it simmer for about 15-20 minutes until the rice is tender. Once done, remove from heat and allow to cool before serving.
