Ingredients
- 4 boneless skinless chicken breasts or thighs
- 2 cups buttermilk
- 1 cup all-purpose flour
- 2 eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- Vegetable oil or peanut oil for frying
Instructions
- Marinate the chicken in buttermilk for at least 1 hour or overnight.
- Prepare a dredging station with seasoned flour, whisked eggs, and an empty bowl.
- Remove the chicken from the buttermilk, dip in egg wash, then coat in flour.
- Heat oil in a skillet over medium-high heat until shimmering.
- Fry the chicken for 4-6 minutes per side until golden brown.
- Transfer to a baking sheet and finish cooking in a preheated oven at 350°F for 10-15 minutes.
- Let the chicken rest for a few minutes on a wire rack before serving.
Notes
For added flavor, experiment with different spices and herbs in the dredging flour.
