Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 2 cups rolled oats
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh thyme, chopped
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté your chopped onions and minced garlic in olive oil until golden.
  3. In a large bowl, combine the sautéed onions and garlic with chopped chicken.
  4. Add rolled oats, egg, salt, black pepper, and paprika. Mix until combined.
  5. Shape the mixture into small balls and place them on the baking sheet.
  6. Bake for 25 to 30 minutes until golden brown, flipping halfway through.
  7. Allow to cool for a few minutes before serving.

Notes

For variations, use ground turkey or plant-based options for the chicken. Quick oats can be substituted for rolled oats.
