Ingredients
- 1 lb boneless chicken (breast or thighs)
- 2 cups rolled oats
- 2 cloves garlic, minced
- 1 onion, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh thyme, chopped
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a skillet over medium heat, sauté your chopped onions and minced garlic in olive oil until golden.
- In a large bowl, combine the sautéed onions and garlic with chopped chicken.
- Add rolled oats, egg, salt, black pepper, and paprika. Mix until combined.
- Shape the mixture into small balls and place them on the baking sheet.
- Bake for 25 to 30 minutes until golden brown, flipping halfway through.
- Allow to cool for a few minutes before serving.
Notes
For variations, use ground turkey or plant-based options for the chicken. Quick oats can be substituted for rolled oats.
