Instructions
- Sort and rinse your cherries, removing any stems and pits. If using frozen cherries, allow them to thaw and drain excess liquid.
- In a medium-sized skillet, combine the cherries, sugar, cornstarch, lemon juice, and vanilla extract. Gently mash some of the cherries to create a chunky texture.
- Place the skillet over medium heat. Stir the mixture continuously and bring it to a gentle boil, stirring until the filling thickens, about 5-7 minutes.
- Remove the skillet from heat and let the filling cool for a few minutes. This step is important to prevent the crust from becoming soggy.
- Once cooled, fill your pie crust or store the filling in an airtight container in the refrigerator for up to a week.
