Ingredients

  • 2 large eggs

  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • Caramel candies
  • 1/4 cup granulated sugar (for coating)
  • 2 tablespoons ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In another bowl, whisk together flour, cream of tartar, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Prepare the caramel by cutting candies into pieces, about 1 teaspoon per cookie.
  7. Use a cookie scoop to portion out dough, flatten it, place a piece of caramel in the center, and wrap the dough around to form a ball.
  8. Coat each cookie ball in the sugar and cinnamon mixture before placing them on the baking sheets.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Let cookies cool on baking sheet for a few minutes, then transfer them to wire racks to cool completely.

Notes
