Ingredients

  • 2 cups granulated sugar
  • 1 cup corn syrup
  • 1 cup water
  • 1 tsp peppermint extract
  • Red and white food coloring
  • Candy thermometer
  • Lollipop sticks

Instructions

  1. Prepare your workspace: Lay out all tools and lightly grease your lollipop molds.
  2. In a medium saucepan, mix granulated sugar, corn syrup, and water. Stir gently until fully combined.
  3. Cook the mixture over medium heat, bringing it to a boil without stirring until it reaches 300°F (hard crack stage) on a candy thermometer.
  4. Remove the saucepan from heat and let it cool slightly. Add the peppermint extract and desired food coloring, stirring gently until blended.
  5. Pour the mixture into prepared molds, inserting lollipop sticks into the center of each heart.
  6. Let the lollipops cool completely until hardened.
  7. Once set, gently remove from molds and store in an airtight container.

Notes

Use coconut sugar for a different flavor profile or maple syrup for a caramel note. Be careful with the temperature to achieve the right consistency.
