Ingredients
- 2 cups granulated sugar
- 1 cup corn syrup
- 1 cup water
- 1 tsp peppermint extract
- Red and white food coloring
- Candy thermometer
- Lollipop sticks
Instructions
- Prepare your workspace: Lay out all tools and lightly grease your lollipop molds.
- In a medium saucepan, mix granulated sugar, corn syrup, and water. Stir gently until fully combined.
- Cook the mixture over medium heat, bringing it to a boil without stirring until it reaches 300°F (hard crack stage) on a candy thermometer.
- Remove the saucepan from heat and let it cool slightly. Add the peppermint extract and desired food coloring, stirring gently until blended.
- Pour the mixture into prepared molds, inserting lollipop sticks into the center of each heart.
- Let the lollipops cool completely until hardened.
- Once set, gently remove from molds and store in an airtight container.
Notes
Use coconut sugar for a different flavor profile or maple syrup for a caramel note. Be careful with the temperature to achieve the right consistency.
