Ingredients

  • 1/4 cup unsalted butter
  • 3/4 cup brown sugar
  • 2 cups whole milk
  • 1/4 cup cornstarch
  • A pinch of salt
  • 3 egg yolks
  • 1 teaspoon pure vanilla extract

Instructions

  1. Melt 1/4 cup of unsalted butter in a medium saucepan over medium heat. Add 3/4 cup of brown sugar and stir until dissolved and bubbling, about 3 minutes.
  2. Gradually whisk in 2 cups of whole milk, combining until smooth and heated through.
  3. In a separate bowl, whisk 1/4 cup of cornstarch, a pinch of salt, and 3 egg yolks until smooth.
  4. Slowly pour a ladle of the warm mixture into the egg yolks, whisking continuously to temper the eggs.
  5. Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened, about 5-7 minutes.
  6. Remove from heat and stir in 1 teaspoon of vanilla and the remaining 2 tablespoons of butter.
  7. Pour into serving dishes, let cool, cover with plastic wrap, and refrigerate for at least 2 hours before serving.
