Ingredients
- 1/4 cup unsalted butter
- 3/4 cup brown sugar
- 2 cups whole milk
- 1/4 cup cornstarch
- A pinch of salt
- 3 egg yolks
- 1 teaspoon pure vanilla extract
Instructions
- Melt 1/4 cup of unsalted butter in a medium saucepan over medium heat. Add 3/4 cup of brown sugar and stir until dissolved and bubbling, about 3 minutes.
- Gradually whisk in 2 cups of whole milk, combining until smooth and heated through.
- In a separate bowl, whisk 1/4 cup of cornstarch, a pinch of salt, and 3 egg yolks until smooth.
- Slowly pour a ladle of the warm mixture into the egg yolks, whisking continuously to temper the eggs.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened, about 5-7 minutes.
- Remove from heat and stir in 1 teaspoon of vanilla and the remaining 2 tablespoons of butter.
- Pour into serving dishes, let cool, cover with plastic wrap, and refrigerate for at least 2 hours before serving.
Notes
Top with whipped cream, crushed toffee, or chocolate shavings for added flair.
