Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips
  • 1 cup heavy cream
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together the softened unsalted butter, brown sugar, and granulated sugar until creamy and well combined, about 2-3 minutes.
  3. Add the eggs and vanilla extract, beating until just combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Fold in the butterscotch chips until evenly distributed.
  7. Scoop and drop dough onto the prepared baking sheet, spacing about 2 inches apart, pressing in a few extra butterscotch chips on top for visual appeal.
  8. Bake for 10-12 minutes or until edges are golden and centers look set but slightly soft. They will firm up while cooling.
  9. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. For the filling, beat together heavy cream, powdered sugar, and a splash of vanilla extract until fluffy and smooth. Spread cream on the flat side of one cookie and sandwich with another.
