Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup semi-sweet or dark chocolate, chopped
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- Optional: chocolate chips, toasted nuts, espresso powder for flavor
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper for easy removal.
- Melt the butter and chocolate together in a heat-proof bowl over simmering water, stirring until smooth. Remove from heat and let it cool slightly.
- Combine sugars: In a large bowl, mix the brown sugar and granulated sugar, then pour in the melted chocolate mixture. Stir until well combined.
- Add eggs and vanilla: Mix in the eggs, one at a time, followed by the vanilla extract, thoroughly incorporating each component.
- Sift together the dry ingredients: In another bowl, whisk the flour, cocoa powder, and salt together to break up any clumps.
- Combine wet and dry: Gradually fold the dry ingredients into the wet mixture, being careful not to overmix. If desired, fold in chocolate chips or nuts at this stage.
- Scoop and bake: Use a cookie scoop or tablespoon to drop rounded mounds onto the prepared baking sheet, leaving space between each ball. Bake for 10-12 minutes, or until the edges are set while the centers appear slightly underbaked.
- Cool completely: Let the cookies cool on the pan for a few minutes before transferring them to a wire rack to continue cooling.
Notes
Chilling the dough for at least an hour can enhance the flavor and texture of the cookies.
