Ingredients
- 2 cups whole wheat flour
- 1 tablespoon baking powder
- ½ cup plain yogurt (unsweetened)
- ⅓ cup honey
- 2 large eggs
- ½ cup coconut oil or peanut butter
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan or line it with parchment paper.
- Combine 2 cups of whole wheat flour and 1 tablespoon of baking powder in a mixing bowl. Whisk together until well-mixed.
- In another bowl, combine ½ cup of plain yogurt, ⅓ cup of honey, and 2 large eggs. Whisk until smooth.
- Mix the dry ingredients into the wet ingredients. Add ½ cup of coconut oil or peanut butter, and stir until just combined.
- Fold in 1 cup of fresh blueberries until evenly distributed.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow it to cool in the pan for about 10 minutes before transferring it to a wire rack.
Notes
Serve with a yogurt frosting or sprinkle fresh blueberries on top for decoration. Store leftovers in an airtight container in the refrigerator for up to five days.
