Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 ½ cups fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  6. Fold in the blueberries gently.
  7. Scoop tablespoon-size portions onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until edges are lightly golden.
  9. Allow to cool on a wire rack before serving.

Notes

For added crunch, sprinkle some coarse sugar on top before baking. If using frozen blueberries, do not thaw to avoid purple streaks.
