Ingredients
- 1 pound chicken breast or thighs, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- Freshly cracked black pepper to taste
- 1 tablespoon vegetable oil
- 3 cloves garlic, minced
- 1 cup sliced bell peppers
- 1 cup snow peas
- 2 tablespoons soy sauce (for the sauce)
- 1 tablespoon oyster sauce (or vegan alternative)
- 1 teaspoon cornstarch (for slurry)
- 1 tablespoon water
- Sliced green onions for garnish
Instructions
- Marinate chicken with soy sauce, cornstarch, and black pepper for at least 15 minutes.
- Heat vegetable oil in a skillet over medium-high heat; sauté minced garlic until fragrant.
- Increase heat and add marinated chicken; sauté until golden brown and cooked through, about 5-7 minutes.
- Add bell peppers and snow peas; stir-fry for 3-4 minutes until crisp-tender.
- Whisk together soy sauce, oyster sauce, and additional black pepper; pour over chicken and veggies.
- Mix cornstarch with water and add to the skillet; stir until sauce thickens, about 1 minute.
- Remove from heat; garnish with green onions and serve hot over rice or your favorite grain.
Notes
Adjust the amount of black pepper according to your preference for heat. Experiment with different vegetables for added color and texture.
