Ingredients
- 1 cup fresh strawberries, mashed
- 2 cups rolled oats
- 1/2 cup no-sugar, no-salt peanut butter
- 1 egg (or 1 tablespoon flaxseed meal mixed with 2.5 tablespoons water for vegan)
- 1/4 cup melted coconut oil (or vegetable oil)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mash the fresh strawberries until smooth.
- Add the rolled oats, peanut butter, egg, and melted coconut oil, mixing until you have a cohesive dough.
- On a lightly floured surface, roll out the dough to about half an inch thick and cut it into fun shapes with cookie cutters.
- Place the treats on your baking sheet and bake for 20-25 minutes, or until the edges are golden and the centers are firm.
- Let them cool completely before serving.
Notes
Keep a close eye on the baking time to avoid overbaking; they should be firm and slightly golden. Store in an airtight container at room temperature for about a week.
