Ingredients
- 1 lb boneless chicken breast or thighs, cut into bite-sized pieces
- 1/2 cup creamy peanut butter
- 1/2 cup sweet chili sauce
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 2 tbsp lime juice
- 1/4 cup crushed peanuts
- 2 green onions, sliced
- Fresh cilantro, for garnish
- Salt and pepper, to taste
- Oil, for cooking
Instructions
- Cut the chicken into bite-sized pieces for even cooking.
- In a bowl, mix the peanut butter, sweet chili sauce, soy sauce, minced garlic, and lime juice until smooth.
- Heat oil in a large skillet over medium-high heat. Add chicken; season with salt and pepper. Cook until browned.
- Lower the heat, pour in the sauce, and gently stir to coat the chicken. Simmer until the sauce thickens slightly.
- Remove from heat and sprinkle with crushed peanuts and green onions. Serve over rice, in lettuce wraps, or alongside a salad, garnished with cilantro.
Notes
For variations, consider using tofu or shrimp instead of chicken or sunflower seed butter as an alternative for peanut allergies.
