Ingredients

  • 1 lb boneless chicken breast or thighs, cut into bite-sized pieces
  • 1/2 cup creamy peanut butter
  • 1/2 cup sweet chili sauce
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 2 tbsp lime juice
  • 1/4 cup crushed peanuts
  • 2 green onions, sliced
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste
  • Oil, for cooking

Instructions

  1. Cut the chicken into bite-sized pieces for even cooking.
  2. In a bowl, mix the peanut butter, sweet chili sauce, soy sauce, minced garlic, and lime juice until smooth.
  3. Heat oil in a large skillet over medium-high heat. Add chicken; season with salt and pepper. Cook until browned.
  4. Lower the heat, pour in the sauce, and gently stir to coat the chicken. Simmer until the sauce thickens slightly.
  5. Remove from heat and sprinkle with crushed peanuts and green onions. Serve over rice, in lettuce wraps, or alongside a salad, garnished with cilantro.
