Ingredients
- 3 ripe bananas
- 1 cup carob powder
- 1 cup shredded coconut
- 1 cup oats
- 1/4 cup honey or maple syrup
- 1/2 cup nut butter (almond or peanut)
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the bananas in a bowl until smooth with no lumps.
- Mix in carob powder, shredded coconut, oats, nut butter, honey or maple syrup, and vanilla extract until evenly blended.
- Scoop the mixture onto the prepared baking sheet using a tablespoon or cookie scoop.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Store leftovers in an airtight container at room temperature for up to 2 days or freeze for up to 3 months.
