Deliciously soft and chewy bites made with ripe bananas, carob powder, and shredded coconut, perfect for a wholesome snack or dessert.

Ingredients

  • 3 ripe bananas
  • 1 cup carob powder
  • 1 cup shredded coconut
  • 1 cup oats
  • 1/4 cup honey or maple syrup
  • 1/2 cup nut butter (almond or peanut)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the bananas in a bowl until smooth with no lumps.
  3. Mix in carob powder, shredded coconut, oats, nut butter, honey or maple syrup, and vanilla extract until evenly blended.
  4. Scoop the mixture onto the prepared baking sheet using a tablespoon or cookie scoop.
  5. Bake for 12-15 minutes or until the edges are lightly golden.
  6. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store leftovers in an airtight container at room temperature for up to 2 days or freeze for up to 3 months.
