Ingredients
- 2 medium Beets, peeled and cooked
- 2 ripe Bananas
- 1 cup Breadcrumbs (whole grain or gluten-free)
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1 tsp Cinnamon (optional)
- 1 tbsp Fresh Parsley or Dill (fresh herbs)
- 1/4 cup Flour
Instructions
- Prepare the Ingredients: Start by peeling and cooking the beets until they’re tender. You can roast them in the oven or boil them. Once they’re cool enough to handle, chop them finely or mash them.
- Mash the Bananas: In a bowl, mash your ripe bananas until you have a smooth, creamy consistency.
- Combine the mashed bananas and beets with breadcrumbs, a pinch of salt, spices, and flour in a larger mixing bowl. Mix until everything is well combined.
- Shape the Balls: With your hands, take small portions of the mixture and roll them into balls about the size of a golf ball.
- Cooking: Heat a skillet over medium heat with a touch of olive oil. Sauté the balls until they’re golden brown on all sides, about 3-4 minutes.
- Serve and Enjoy: Place them on a paper towel to absorb excess oil and then serve warm, garnished with fresh herbs.
Notes
Cooking in batches ensures that each ball gets a lovely golden-brown exterior. Toast breadcrumbs lightly for added flavor.
