Ingredients

  • 2 ripe bananas
  • 1 cup cooked beetroot, chopped
  • 1 cup rolled oats
  • 1/2 cup unsweetened peanut butter
  • Optional: 1 tablespoon flaxseed or coconut oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the beetroot by peeling and chopping into small chunks, then steaming or roasting until tender (about 20-30 minutes).
  3. Mash the ripe bananas in a mixing bowl until smooth.
  4. Mix the cooled beetroot with the bananas, then stir in the oats and peanut butter until well combined.
  5. Form the mixture into small balls, about 1 inch in diameter, and place them on a lined baking sheet.
  6. Bake for 20-25 minutes until firm to the touch.
