- 2 pounds russet or Yukon Gold potatoes
- 6 strips bacon
- 1 cup shredded cheddar or preferred cheese
- Fresh chives or parsley
- 2 large eggs
- Panko breadcrumbs
- Salt, pepper, and optional garlic powder
Instructions
- Peel and cut the potatoes into chunks. Boil in salted water until fork-tender, then drain and let steam dry.
- Cook bacon in a skillet over medium heat until crispy. Set aside to cool and chop into small pieces.
- Mash the drained potatoes until smooth and stir in bacon, cheese, herbs, eggs, and seasonings until combined.
- Scoop a handful of the mixture and shape it into a ball; repeat until finished.
- Roll each ball in breadcrumbs until fully coated.
- Heat oil in a deep skillet over medium heat and fry croquettes in batches until golden brown. Drain on paper towels.
- Serve hot with your favorite dipping sauce.
