Ingredients

  • 2 pounds russet or Yukon Gold potatoes
  • 6 strips bacon
  • 1 cup shredded cheddar or preferred cheese
  • Fresh chives or parsley
  • 2 large eggs
  • Panko breadcrumbs
  • Salt, pepper, and optional garlic powder

Instructions

  1. Peel and cut the potatoes into chunks. Boil in salted water until fork-tender, then drain and let steam dry.
  2. Cook bacon in a skillet over medium heat until crispy. Set aside to cool and chop into small pieces.
  3. Mash the drained potatoes until smooth and stir in bacon, cheese, herbs, eggs, and seasonings until combined.
  4. Scoop a handful of the mixture and shape it into a ball; repeat until finished.
  5. Roll each ball in breadcrumbs until fully coated.
  6. Heat oil in a deep skillet over medium heat and fry croquettes in batches until golden brown. Drain on paper towels.
  7. Serve hot with your favorite dipping sauce.
