- 4 slices of bacon, diced
- 1 package (16 oz) of gnocchi (store-bought or homemade)
- 1 cup sharp cheddar cheese, shredded
- 1 cup heavy cream
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 teaspoon fresh thyme
- Salt and black pepper to taste
- Optional: Leafy greens (spinach or kale) for added nutrition
Instructions
- Cook the bacon in a large pot over medium heat until crispy. Remove and drain on paper towels, leaving bacon fat in the pot.
- Add minced garlic and chopped onion to the pot. Sauté until fragrant and translucent, about 5 minutes.
- Pour in chicken or vegetable broth and bring to a gentle simmer.
- Incorporate gnocchi and cook according to package instructions, typically 3-5 minutes until they float.
- Reduce heat and stir in heavy cream and shredded cheddar until melted and creamy.
- Add back the crispy bacon and season with thyme, salt, and pepper. Serve hot, garnished with extra cheese or herbs if desired.
Notes
For extra creaminess, purée a portion of the soup before adding the gnocchi. Consider adding more vegetables for nutrition.
