A comforting and creamy soup that combines smoky bacon, tender gnocchi, and sharp cheddar cheese for a delightful meal.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 4 slices of bacon, diced
  • 1 package (16 oz) of gnocchi (store-bought or homemade)
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon fresh thyme
  • Salt and black pepper to taste
  • Optional: Leafy greens (spinach or kale) for added nutrition

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and drain on paper towels, leaving bacon fat in the pot.
  2. Add minced garlic and chopped onion to the pot. Sauté until fragrant and translucent, about 5 minutes.
  3. Pour in chicken or vegetable broth and bring to a gentle simmer.
  4. Incorporate gnocchi and cook according to package instructions, typically 3-5 minutes until they float.
  5. Reduce heat and stir in heavy cream and shredded cheddar until melted and creamy.
  6. Add back the crispy bacon and season with thyme, salt, and pepper. Serve hot, garnished with extra cheese or herbs if desired.

Notes

For extra creaminess, purée a portion of the soup before adding the gnocchi. Consider adding more vegetables for nutrition.
