- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened

- 3 large eggs

- 3 medium apples, peeled and diced

- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 3/4 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/3 cup cold butter, cubed
Instructions
- Preheat oven to 325°F (160°C). Mix graham crumbs, sugar, and melted butter. Press into bottom of a 9-inch springform pan. Bake for 8 minutes.
- In a skillet, melt butter. Add apples, brown sugar, cinnamon, and nutmeg. Cook for 5-7 minutes until softened.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream and vanilla.
- Pour filling over crust. Spoon cooked apples evenly over cheesecake batter.
- In a bowl, mix flour, brown sugar, and cinnamon. Cut in butter until crumbly. Sprinkle over apples.
- Bake for 55-65 minutes until center is almost set. Turn off oven, crack door, and let cheesecake rest for 1 hour.
- Refrigerate for at least 4 hours before slicing. Serve with caramel drizzle if desired.
Notes
For the best balance, use tart apples like Granny Smith. Wrap the springform pan in foil and bake in a water bath to avoid cracks. Make it a day ahead for maximum flavor.
