Ingredients
- 2 cups apple cider
- 2 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup brown sugar (packed)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cloves (optional)
- 2 large eggs
- ½ cup unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, bring the apple cider to a boil. Reduce heat and let it simmer until reduced to about 1 cup. Set aside to cool.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and spices.
- In another bowl, beat the eggs and add the melted butter, cooled apple cider, and vanilla extract. Mix thoroughly.
- Gradually add the wet ingredients into the dry ingredients. Stir until just combined.
- If frying, heat oil in a deep pan (about 350°F). If baking, preheat the oven to 375°F and grease your donut pan.
- Fill the donut molds or pipe into hot oil, about 2/3 full.
- For frying, cook for about 2-3 minutes on each side until golden brown. For baking, bake for 10-12 minutes, or until a toothpick comes out clean.
- While warm, toss the donuts in a mixture of sugar and cinnamon or drizzle with a simple glaze.
Notes
Ensure not to crowd the pan when frying. Allow baked donuts to cool in the pan before transferring to a wire rack.
