Delicious, cake-like donuts infused with warm apple cider and spices, perfect for autumn.

Ingredients

  • 2 cups apple cider
  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar (packed)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves (optional)
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, bring the apple cider to a boil. Reduce heat and let it simmer until reduced to about 1 cup. Set aside to cool.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and spices.
  3. In another bowl, beat the eggs and add the melted butter, cooled apple cider, and vanilla extract. Mix thoroughly.
  4. Gradually add the wet ingredients into the dry ingredients. Stir until just combined.
  5. If frying, heat oil in a deep pan (about 350°F). If baking, preheat the oven to 375°F and grease your donut pan.
  6. Fill the donut molds or pipe into hot oil, about 2/3 full.
  7. For frying, cook for about 2-3 minutes on each side until golden brown. For baking, bake for 10-12 minutes, or until a toothpick comes out clean.
  8. While warm, toss the donuts in a mixture of sugar and cinnamon or drizzle with a simple glaze.

Notes

Ensure not to crowd the pan when frying. Allow baked donuts to cool in the pan before transferring to a wire rack.
