Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, baking powder, cinnamon, and nutmeg.
- Cream together butter, granulated sugar, and brown sugar until smooth.
- Beat in the egg and apple cider until well blended.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Scoop tablespoon-sized balls of dough onto a parchment-lined baking sheet.
- Sprinkle a mix of cinnamon and sugar on top of each cookie before baking.
- Bake for about 10-12 minutes, or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a more intense apple flavor, reduce the cider slightly in a saucepan until syrupy before adding to the dough. Avoid overmixing the dough to ensure soft cookies.
