Instructions
- Prepare the Sweet Potatoes: Peel and cut sweet potatoes into chunks. Boil or steam until tender (15-20 minutes). Drain and cool.
- Mash and Mix: Mash the sweet potatoes until smooth and combine with peanut butter and oats until a dough-like consistency forms.
- Shape the Cookies: Preheat the oven to 350°F (175°C). Scoop tablespoon-sized portions, shape into balls, and flatten slightly.
- Bake: Bake for 20-25 minutes or until golden brown and firm.
- Cool Down: Allow cookies to cool on a wire rack.
- Store or Share: Store in an airtight container for up to a week or freeze for longer storage.
