  • 1 cup natural peanut butter (unsweetened, xylitol-free)
  • 2 cups rolled oats

Instructions

  1. Prepare the Sweet Potatoes: Peel and cut sweet potatoes into chunks. Boil or steam until tender (15-20 minutes). Drain and cool.
  2. Mash and Mix: Mash the sweet potatoes until smooth and combine with peanut butter and oats until a dough-like consistency forms.
  3. Shape the Cookies: Preheat the oven to 350°F (175°C). Scoop tablespoon-sized portions, shape into balls, and flatten slightly.
